Acapulco Ceviche

The classic Acapulco shrimp ceviche. This recipe is the traditional one you find throughout Acapulco.

  • 1 kilo shrimp, medium peeled and deveined
  • 4 tomatoes, seedless and chopped
  • 2 onions, chopped
  • 1 bunch fresh cilantro, chopped
  • 10 limes, its juice
  • 1 serrano chile, chopped
  • 1/4 cups ketchup
  • 1/4 cups orange soda
  • 1 avocado
  • 1/4 cups pitted olives

  • Marinate the shrimp in the juice of 5 limes, cover, and refrigerate for 1 hour before preparing the ceviche.
  • Wash the shrimp marinated in lime and place in a deep bowl.
  • Add the tomato, onion, cilantro, olives, and serrano chili to the shrimp.
  • Add the juice of the remaining 5 limes, ketchup, and orange soda. Mix well and season with salt to taste.
  • Refrigerate for at least 20 minutes before serving. When serving, add slices of avocado.
