Slice half an onion into rings, and finely chop the tomato, garlic cloves, and olives.
Over medium/low heat, heat the oil in a frying pan; once hot, add the garlic, onion, tomato, and olives. Once all the ingredients are fried (approximately 10 minutes), add the white wine and stir constantly until the alcohol from the wine evaporates (approximately 15 minutes).
Preheat the oven to 170 degrees Celsius.
Place each trout individually in aluminum foil, add the proportional amount of the mixture from the pan, and wrap the trout with the vegetable mixture in the aluminum foil.
Place the 4 trout in the oven for 25 minutes.
