3 tablespoons butter, cubed, for the buffalo sauce
1 1/2 cups hot sauce, for wings, for the buffalo sauce
3 tablespoons apple cider vinegar, for the buffalo sauce
1 teaspoon paprika, for the buffalo sauce
1 teaspoon garlic powder, for the buffalo sauce
1/2 teaspoons onion powder, for the buffalo sauce
salt

2 cups shrimp, medium, cleaned and shelled shrimp
1 Eva® butterhead lettuce
1/2 cups red onion, finely chopped, for serving
1/4 cups cilantro, small leaves, for serving
1/2 cups jocoque
lime, quartered, for serving

In a small pot, melt the butter over low heat, add the hot wing sauce, apple cider vinegar, paprika, garlic powder, onion powder, salt, and pepper, and mix; cook for 5 minutes or until the sauce starts to bubble.Add the shrimp, cook for 10 more minutes, and remove from heat.
Place two leaves of Eva® French Lettuce, one on top of the other, to simulate a tortilla. Add the buffalo shrimp, and top with red onion, cilantro, jocoque, and lime.
