Quick Ceviche

  • 450 grams large shrimp, peeled and cleaned
  • 1/2 cups lemon juice
  • 1/2 cups orange juice
  • 1/4 cups Italian dressing
  • 1/4 cups fresh cilantro, chopped
  • 1/2 cups jicama, finely sliced
  • 1/4 cups red onion, sliced
  • 1/2 cups carrot , grated
  • 1/2 cups corn kernel

  • Place the shrimp in boiling water until cooked.
  • Drain and rinse the shrimp to cool them quickly.
  • Add the juices, dressing, cilantro, and other ingredients. Cover and refrigerate the ceviche for 30 minutes.
