450 grams large shrimp, peeled and cleaned
1/2 cups lemon juice
1/2 cups orange juice
1/4 cups Italian dressing
1/4 cups fresh cilantro, chopped
1/2 cups jicama, finely sliced
1/4 cups red onion, sliced
1/2 cups carrot , grated
1/2 cups corn kernel

Place the shrimp in boiling water until cooked.
Drain and rinse the shrimp to cool them quickly.
Add the juices, dressing, cilantro, and other ingredients. Cover and refrigerate the ceviche for 30 minutes.
