  • 1 snail, very fresh seafood
  • 4 lemons, (juice)
  • 1 tomato , large, peeled, and chopped
  • 1 bunch fresh cilantro, chopped
  • 1/2 red onions, chopped
  • 1 Habanero chile, deveined, deseeded, and sliced
  • 3 tablespoons olive oil , or Yucatecan green oil
  • salt , and pepper to taste
  • tortilla chips , for accompaniment
