Shrimp Ceviche

A delicious fresh shrimp ceviche marinated in lemon, piquin chili, and orange soda.

  • 1 kilo shrimp, large, headless
  • 2 cups lime juice
  • 1 cup cucumber, peeled and seedless, cut into small cubes
  • 1 cup tomato, seedless, cut into small cubes
  • 1/2 cups fresh cilantro, chopped
  • 3 tablespoons piquín chile
  • 1/2 cups orange soda
  • 1 package saltine crackers
  • 1/2 cups red onion, finely chopped

  • Start by cleaning the shrimp. Peel them, remove the intestines, and wash them with cold water.
  • Marinate the shrimp in 1 cup of lemon juice and salt for 30 minutes.
  • Wash them. When marinating in lemon, the shrimp will change to a pink color.
  • Place the shrimp in a deep bowl.
  • Add the remaining lemon juice, cucumber, tomato, cilantro, chili, soda, and red onion. Mix.
  • Allow to marinate for at least 2 hours before serving.
  • Serve with tortilla chips or crackers.
