1 kilo shrimp, large, headless
2 cups lime juice
1 cup cucumber, peeled and seedless, cut into small cubes
1 cup tomato, seedless, cut into small cubes
1/2 cups fresh cilantro, chopped
3 tablespoons piquín chile
1/2 cups orange soda
1 package saltine crackers
1/2 cups red onion, finely chopped

Start by cleaning the shrimp. Peel them, remove the intestines, and wash them with cold water.
Marinate the shrimp in 1 cup of lemon juice and salt for 30 minutes.
Wash them. When marinating in lemon, the shrimp will change to a pink color.
Place the shrimp in a deep bowl.
Add the remaining lemon juice, cucumber, tomato, cilantro, chili, soda, and red onion. Mix.
Allow to marinate for at least 2 hours before serving.
Serve with tortilla chips or crackers.
