Cod and Potato Croquettes

500 cod, fresh
2 potatoes
1/2 onions, finely chopped
2 tablespoons fresh parsley, chopped
2 eggs, separated yolks from the whites
1 clove garlic, finely chopped
2 tablespoons olive oil
salt

Place two medium pots with water and salt over medium heat.
Boil the fresh cod in one pot until cooked (7-10 minutes).
In the other pot, boil the potatoes with skin until well cooked.
Shred the fish with a fork or a cloth.
Remove the skin from the potatoes and mash them with a fork.
In a deep bowl, mix the cod, potato, olive oil, onion, parsley, garlic, and egg. Season with salt and pepper.
Using a spoon, form balls with the mixture and place them on a baking sheet lined with parchment paper. Refrigerate for 1 hour to make frying easier.
Heat vegetable oil in a medium skillet until very hot and bubbling when a croquette is added.
Fry the croquettes until golden (about 3 minutes) and remove from the oil. Place on paper towels to absorb the excess oil.
Serve the croquettes accompanied by lemon slices.
