Cod and Potato Croquettes

A delicious snack from Portugal and Brazil, the cod balls have a unique and delightful flavor. Accompany them with some lemon slices.

  • 500 cod, fresh
  • 2 potatoes 2 potatoes

  • Place two medium pots with water and salt over medium heat.
  • Boil the fresh cod in one pot until cooked (7-10 minutes).
  • In the other pot, boil the potatoes with skin until well cooked.
  • Shred the fish with a fork or a cloth.
  • Remove the skin from the potatoes and mash them with a fork.
  • In a deep bowl, mix the cod, potato, olive oil, onion, parsley, garlic, and egg. Season with salt and pepper.
  • Using a spoon, form balls with the mixture and place them on a baking sheet lined with parchment paper. Refrigerate for 1 hour to make frying easier.
  • Heat vegetable oil in a medium skillet until very hot and bubbling when a croquette is added.
  • Fry the croquettes until golden (about 3 minutes) and remove from the oil. Place on paper towels to absorb the excess oil.
  • Serve the croquettes accompanied by lemon slices.
