Cod and Shrimp Cataplana

The cod and shrimp cataplana is the Portuguese equivalent of bouillabaisse.

  • 2 tablespoons olive oil
  • 1 chorizo, smoked, sliced
  • 2 cloves garlic, chopped
  • 4 cod, salted
  • black pepper, freshly ground
  • 8 tomatillos, large, sliced
  • sprigs thyme
  • 2 leaves bay
  • 1 bottle dry white wine
  • 1 handful basil, fresh parsley
  • 500 grams shrimp, fresh, raw
  • 125 grams olives

  • Start by browning the cod in a little oil, set aside. Next, add the chorizo and garlic to the cataplana and sauté for 3-4 minutes.
  • Incorporate the cod into the cataplana, season well with pepper. Cover with the tomatoes and season again with pepper. Add the herbs and cover with wine. Close the cataplana and cook for 20 minutes.
  • Add the shrimp, cook for 5 more minutes, add the olives.
  • Sprinkle everything with herbs and serve.
