Crab Soup with Noodles

  • 90 grams Noodle
  • 1 tablespoon butter
  • 1 bunch chives
  • 5 cups vegetable broth
  • 125 grams crab, fresh or canned
  • 1 pinch cayenne pepper
  • 1 tablespoon tomato purée
  • 2 teaspoons lime juice

  • Cook the noodles in boiling water and set aside. Heat the butter in a saucepan and add diagonally cut green onions (2cm) with finely chopped celery and cook for 4 minutes.
  • Add the broth and boil for 5 minutes. Flake the crab and add it to the broth along with the drained noodles. Season with salt and cayenne. Serve the soup piping hot with lemon juice.
