1 bunch cilantro, for the patties
1 cup Manchego cheese, for the patties
2 eggs, for the patties
1/2 cups flour, for the patties

Wash and disinfect the vegetables.
In a pot with high heat, add the potatoes and let them cook until soft.
Peel the potatoes and mash them.
In a bowl, mix the potato, tuna, cilantro, grated Manchego cheese, salt, and pepper.
In a bowl, add the egg and season with salt and pepper, set aside.
Form croquettes and coat them in flour, egg, and breadcrumbs.
In a saucepan with oil over medium heat, fry the croquettes, draining the excess fat.
To finish, serve the croquettes, accompanied by dressing and a fresh salad.
