4 red snapper fillets, skinless
1/4 teaspoons white pepper
2 tablespoons olive oil
2 tablespoons olive oil, for the sauce
1 clove garlic, chopped
1/2 onions, filleted
3 tomatoes, cut into small cubes
1 cup tomato purée
1/2 cups red bell pepper, baked, cleaned, and cut into small cubes
1 cube Knorr Tomate® tomato bouillon
2 leaves bay
1/2 cups green olives, rinsed and sliced

Season the fish with pepper on both sides.
Heat 2 tablespoons of olive oil in a skillet and brown the fish fillets on all sides. Set aside.
For the sauce, heat the remaining oil and sauté the garlic with the onion. Once they are soft, add the diced tomato and cook for 2 more minutes.
Add the tomato puree, the bell peppers, the Knorr® Tomato cube, and the bay leaf; cook over low heat for 5 minutes or until the tomato is well cooked.
Add the olives, the fish fillets, and cook for 3 more minutes or until the fish is tender and well cooked.
Serve accompanied by white rice.
