Delicious Veracruz-Style Fish

If you want to impress at mealtime, you have to prepare this Veracruz-style fish, as contrary to what many believe, it is very easy to make and very healthy, the best part is the unique flavor that Knorr® adds! Your family will love it!

  • 4 red snapper fillets, skinless
  • 1/4 teaspoons white pepper
  • 2 tablespoons olive oil
  • 2 tablespoons olive oil, for the sauce
  • 1 clove garlic, chopped
  • 1/2 onions, filleted
  • 3 tomatoes, cut into small cubes
  • 1 cup tomato purée
  • 1/2 cups red bell pepper, baked, cleaned, and cut into small cubes
  • 1 cube Knorr Tomate® tomato bouillon
  • 2 leaves bay
  • 1/2 cups green olives, rinsed and sliced

  • Season the fish with pepper on both sides.
  • Heat 2 tablespoons of olive oil in a skillet and brown the fish fillets on all sides. Set aside.
  • For the sauce, heat the remaining oil and sauté the garlic with the onion. Once they are soft, add the diced tomato and cook for 2 more minutes.
  • Add the tomato puree, the bell peppers, the Knorr® Tomato cube, and the bay leaf; cook over low heat for 5 minutes or until the tomato is well cooked.
  • Add the olives, the fish fillets, and cook for 3 more minutes or until the fish is tender and well cooked.
  • Serve accompanied by white rice.
