Fish a la Livornese

Fish a la Livornese is a recipe for white fish in a sauce of tomatoes, olives, and basil.

  • 4 golden fish, (oriental, sierra, etc)
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 2 tomatoes, peeled and diced
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cups basil
  • 1/4 cups kalamata olive
  • 4 tablespoons capers

  • In a large skillet, heat the oil over medium heat. Add the garlic and cook for 30 seconds.
  • Add the tomatoes, salt, and pepper, and with a wooden spoon, crush the tomatoes while they cook until they start to boil.
  • Reduce the heat to low and cook for 10 minutes.
  • Place the fish fillets in the tomato sauce, cover, and cook for 10 minutes.
  • With a spatula, transfer the fish to a warm serving dish.
  • Add the basil, olives, and capers to the tomatoes and mix well.
  • Pour the sauce over the fish and serve.
