Fish a la Vera

  • 4 fish fillets , boneless: cod or turbot or sole
  • 4 cups potato , cooked
  • white wine, type manzanilla or amontillado
  • pimentones, from La Vera
  • 1 onion
  • extra virgin olive oils
  • salt , to taste

  • In the baking tray, we place parchment paper. We create a bed of potatoes and onions, neither too thin nor too thick, add salt, and a mixture we have prepared with wine, oil, and paprika from La Vera. In a glass of water, we add a splash of oil (about 3 tablespoons), a finger of wine, and half a tablespoon of paprika.
  • We drizzle the potatoes and onions with the mixture and wait about 20 to 25 minutes with the oven set high: 180-200ºC.
  • After this time, we place the previously seasoned fish on top of the potatoes with the skin facing out and wait another 10 to 15 minutes depending on the thickness of the fish, and it's ready.
