1/2 cups orange juice, fresh
2 tablespoons lime juice
2 tablespoons lemon juice
1 tablespoon olive oil
1 orange zest
1 lime zest
1/2 teaspoons ginger, grated
1 pinch cayenne pepper
4 white fish fillets, thick (like snook)
1/2 teaspoons sea salt
pepper, to taste
2 tablespoons water
1/4 cups peppermint, finely chopped

In a bowl, mix the orange juice, lemon juice, olive oil, and orange and lemon zest. Add the grated ginger and cayenne pepper.
Place the fish fillets in a pyrex and season with salt and pepper.
Pour half of the juice mixture over the fish and make sure they are well coated. Let marinate in the refrigerator for 30 minutes.
Preheat the oven to 400º F.
Remove the pyrex with the fish from the refrigerator and add 2 tablespoons of water.
Bake until the fillets are tender and cooked, about 10-15 minutes depending on the thickness of the fish.
Meanwhile, place the rest of the juice mixture in a pot over high heat and reduce by half.
