Fish Fillet with Citrus Ginger Sauce

  • 1/2 cups orange juice, fresh
  • 2 tablespoons lime juice
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 orange zest
  • 1 lime zest
  • 1/2 teaspoons ginger, grated
  • 1 pinch cayenne pepper
  • 4 white fish fillets, thick (like snook)
  • 1/2 teaspoons sea ​​salt

  • 1/4 cups peppermint, finely chopped

  • In a bowl, mix the orange juice, lemon juice, olive oil, and orange and lemon zest. Add the grated ginger and cayenne pepper.
  • Place the fish fillets in a pyrex and season with salt and pepper.
  • Pour half of the juice mixture over the fish and make sure they are well coated. Let marinate in the refrigerator for 30 minutes.
  • Preheat the oven to 400º F.
  • Remove the pyrex with the fish from the refrigerator and add 2 tablespoons of water.
  • Bake until the fillets are tender and cooked, about 10-15 minutes depending on the thickness of the fish.
  • Meanwhile, place the rest of the juice mixture in a pot over high heat and reduce by half.
