Fish Fingers and Baja-style Tacos

  • 200 grams white fish fillet, cut into strips, (4 fillets)
  • 1 1/2 cups flour
  • 1/2 cups cornstarch
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons oregano
  • 1/4 cups mustard
  • 1 1/4 cups sparkling water
  • vegetable oil, for frying
  • 4 sprigs cilantro
  • 1 1/2 cups carrot, red cabbage, white cabbage, sliced, for garnish

  • In a bowl, add the fish and coat evenly with mustard, followed by the dry ingredients: oregano, salt, pepper, cornstarch, and part of the flour. Mix until incorporated and completely coated. Then separate the prepared fish from the bowl.
  • Add the remaining flour to the bowl, pour in the sparkling water, and whisk the ingredients until incorporated into a smooth, thick mixture. If necessary, you can add still water to lighten the consistency.
  • Dip the prepared fish fillets in the previous mixture and coat completely.
  • In a pan (or deep fryer), heat oil over medium heat, dip the fish fillets, and fry for 3 minutes or until golden brown. Drain on paper towels and serve some separately to enjoy the fish fingers. Serve with mayonnaise or your little ones' favorite dressing.
  • To prepare the tacos, place the fish fillets on a tortilla and add the carrot and cabbage mix, then add fresh cilantro. Serve with lemon and spicy mayonnaise and enjoy.
