Fish in Garlic Mojo

Garlic mojo is a very typical preparation throughout Mexico, especially in traditional restaurants on the coasts; this recipe consists of frying fish in abundant oil with garlic, and you can add a little cilantro to further flavor your preparation.

  • 2 sea bass, in fillet or sliced
  • 1/2 cups lime juice, for marinating
  • 1 pinch salt
  • 1 cup olive oil, for the garlic mojo
  • 10 cloves garlic, sliced
  • 1/4 cups fresh cilantro, finely chopped

  • To marinate the fish: In a bowl, marinate the sea bass with lemon juice and salt for 10 minutes, let it rest in the refrigerator and set aside.
  • For the garlic mojo: In a bowl, add the olive oil, garlic, and cilantro.
  • Heat a pan over medium heat and add the garlic mojo preparation, cook until the garlic is fried, remove the fried garlic so it doesn’t burn. Fry the fish in the same pan for 10 minutes. Remove from the pan and serve with the fried garlic, salad, white rice, and lemon.
