Fish Wrapped in Habanero Sauce

  • 2 tablespoons vegetable oil, for the sauce
  • 1/4 onions, in quarters, for the sauce
  • 5 tomatoes, in quarters, for the sauce
  • 5 tomatillos, in halves, for the sauce
  • 2 cloves garlic, for the sauce
  • 4 Habanero chiles, for the sauce
  • 1/4 cups fresh cilantro, for the sauce
  • 1 teaspoon salt, for the sauce
  • 2 allspice berries, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • banana leaf, cut into cubes
  • 3 sea bass, 200 g each
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1/4 cups güero chile, in julienne
  • 1/4 cups white onion, fileteada
  • 1/4 cups carrot, cut into strips

  • Preheat the oven to 200° C.
  • For the sauce, in a skillet over medium heat, fry the onion, tomato, tomatoes, garlic, and habanero chili in oil until softened, add cilantro, salt, and black pepper for 10 minutes, then add chicken broth and let it reduce. Blend, strain, and set aside.
  • Heat a griddle over high heat and roast the banana leaves until softened, set aside.
  • On a baking tray, place the banana leaf, arrange the fish in the center, cover with the sauce, yellow chili, white onion, and carrot. Season with salt, pepper, and fold it like a tamale, then bake for 15 minutes.
  • Remove from the oven, open the banana leaf, and serve with pot beans and more habanero sauce on the side.
