  • 3 cloves garlic
  • 1/2 onions
  • 1 pinch cumin
  • 1 pinch oregano
  • 15 grams achiote
  • 2 cloves
  • 2 pepper
  • 1 bell pepper
  • 35 milliliters vinegar
  • 75 milliliters oil
  • 2 lemons
  • 1 leaf banana
  • salt , to taste
  • pepper, to taste
  • 2 fish steaks, fish
  • 1 tomato

  • In a molcajete, grind garlic, onion, oregano, achiote, cloves, cumin, pepper, and add a little vinegar, oil, lime juice, and season with salt and pepper.
  • Grease a clay pot and place the banana leaf at the bottom, add some of the marinade, then the fillets, and another layer of marinade, wrap it up and put it in the oven for 20 minutes at 200° C.
  • With the tomato, the remaining onion, and bell pepper, cut into slices, place on a tray with sil pack and dehydrate in the oven.
