In each aluminum foil, add onion and habanero pepper. Place each fillet on top of the onion and pepper. Add a little epazote, lemon slices, olive oil, vinegar, salt, and pepper on top of each fillet.
Fold the packets carefully to ensure they are well sealed.
Cook on a tray in the oven for 10 minutes. Serve immediately.
