Parchment Trout

  • 4 trout fillets
  • 1 1/2 tablespoons unsalted butter , cut into 4
  • 1 sprig epazote, chopped
  • salt , to taste
  • pepper, to taste
  • 240 grams onion, sliced
  • 1 Habanero chile, sliced
  • olive oil
  • balsamic vinegars
  • 2 lemons, into rounds

  • Preheat the oven to 190ºC.
  • Brush the aluminum with olive oil.
  • Sprinkle the trout fillets with salt and pepper.
  • In each aluminum foil, add onion and habanero pepper. Place each fillet on top of the onion and pepper. Add a little epazote, lemon slices, olive oil, vinegar, salt, and pepper on top of each fillet.
  • Fold the packets carefully to ensure they are well sealed.
  • Cook on a tray in the oven for 10 minutes. Serve immediately.
