  • 4 red snapper fillets
  • 1/2 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 4 tomatoes, chopped
  • 1 ancho chile, seedless
  • 2 guajillo chiles, seedless
  • 1 cup vegetable oil
  • oregano

  • Sauté the garlic and onion in a little oil, add the chiles and tomato.
  • Add a cup of water and the oregano; season with salt and pepper.
  • Blend the sauté and let it cool.
  • Coat the fillets and place them in a bag.
  • Let marinate overnight.
  • Place the fillets on a baking sheet and bake for 15 minutes at 180°C.
