Marinate the fillets in milk for at least 1 hour before cooking.
Remove the fillets from the milk, dry, and season with salt and pepper on both sides.
Grease a pan with a little vegetable oil and sear the fillets on both sides over high heat (about 1 minute per side).
Remove the fish from the pan and lower the heat. Add the olive oil, garlic, and cook for 2 minutes.
Add the white wine, cilantro, and lemon zest. Taste and season with salt and pepper. Heat the sauce until it begins to boil and remove from heat.
Marinate the seared fish in the sauce and finish cooking on a grill or in a pan for 3 more minutes on each side. Add more sauce over the fish while cooking.
Serve immediately.
