Fish al Pastor

  • 1 stick achiote
  • 4 guajillo chiles
  • 1/2 cups orange juice
  • pepper, to taste
  • 2 cloves garlic
  • onions
  • 1 pinch basil
  • 1 pinch thyme
  • salt , to taste
  • 1/4 cups white vinegar, or apple
  • fresh cilantro
  • pineapples, in cubes
  • 3 fish fillets

  • Blend the achiote, chiles, orange juice, pepper, garlic, onion, basil, thyme, salt, and vinegar.
  • Strain and marinate the fish for 1 hour.
  • Place everything in a pan. Let the fish cook, and at the end, shred it.
  • Serve with pineapple and cilantro.
