This recipe for fish pastor tacos tastes delicious! The tacos are served on lettuce to make them healthier, but I assure you they taste just as good as the traditional ones.

1 guajillo chile
1 árbol chile
2 oranges
1 tablespoon apple cider vinegar
1/2 onions
2 cloves garlic
2 tablespoons achiote
4 fish fillets, preferably sole loin
2 slices pineapple, fresh
1/2 bunches fresh cilantro, chopped
1/2 Romaine lettuces

Bring water to a boil in a pot.
Soak all the chiles for 10 minutes and then remove the seeds and veins.
Blend the chiles with the vinegar, orange juice, garlic, achiote, and onion.
Marinate the fillets in the prepared sauce for two hours.
Cook the fillets on a grill or griddle brushed with a little olive oil and flip once to brown on both sides.
Cut the fillets into strips and place them on the previously peeled lettuce leaves.
Add the fresh pineapple in cubes and the cilantro.
Enjoy!
