Fish Pastor Tacos

This recipe for fish pastor tacos tastes delicious! The tacos are served on lettuce to make them healthier, but I assure you they taste just as good as the traditional ones.

  • 1 guajillo chile
  • 1 árbol chile
  • 2 oranges
  • 1 tablespoon apple cider vinegar
  • 1/2 onions
  • 2 cloves garlic
  • 2 tablespoons achiote
  • 4 fish fillets, preferably sole loin
  • 2 slices pineapple, fresh
  • 1/2 bunches fresh cilantro, chopped
  • 1/2 Romaine lettuces

  • Bring water to a boil in a pot.
  • Soak all the chiles for 10 minutes and then remove the seeds and veins.
  • Blend the chiles with the vinegar, orange juice, garlic, achiote, and onion.
  • Marinate the fillets in the prepared sauce for two hours.
  • Cook the fillets on a grill or griddle brushed with a little olive oil and flip once to brown on both sides.
  • Cut the fillets into strips and place them on the previously peeled lettuce leaves.
  • Add the fresh pineapple in cubes and the cilantro.
  • Enjoy!
