Dry the fish fillets well with paper towels, cut into sticks, and add salt and pepper to taste.
Prepare 3 containers for the breading: one with flour, one with egg, and another with breadcrumbs. Dip the sticks in flour, then in the egg, and finally in the breadcrumbs.
Place the fish sticks on a baking sheet and spray them with 2 shots of PAM® Olive on top and 2 shots on the other side.
