Fish Tacos al Pastor SuKarne

  • 4 SuKarne® basa fillets
  • 2 ancho chiles, rehydrated
  • 2 guajillo chiles, rehydrated
  • 1/2 sticks achiote
  • 2 cloves garlic
  • 2 tablespoons apple cider vinegar
  • 1/4 cups orange juice
  • 2 tablespoons oil
  • salt
  • pepper
  • pineapples, in slices
  • corn tortillas
  • 1/2 onions, finely chopped
  • 1 bunch fresh cilantro, chopped

  • Blend the chiles with the achiote, garlic, vinegar, orange juice, and oil. Grind until you achieve a paste. Season with salt and pepper.
  • Marinate the fish in this mixture for a good while to enhance the flavor.
  • In a skillet or grill, cook the fish until the lines are marked. Remove from the grill and let it rest.
  • Chop to get smaller pieces.
  • Grill the pineapple on your grill or griddle until the marks are visible.
  • Heat the tortillas and prepare the tacos to your liking.
