2 ancho chiles, rehydrated
2 guajillo chiles, rehydrated
1/2 sticks achiote
2 cloves garlic
2 tablespoons apple cider vinegar
1/4 cups orange juice
2 tablespoons oil
salt

pineapples, in slices

1/2 onions, finely chopped
1 bunch fresh cilantro, chopped

Blend the chiles with the achiote, garlic, vinegar, orange juice, and oil. Grind until you achieve a paste. Season with salt and pepper.
Marinate the fish in this mixture for a good while to enhance the flavor.
In a skillet or grill, cook the fish until the lines are marked. Remove from the grill and let it rest.
Chop to get smaller pieces.
Grill the pineapple on your grill or griddle until the marks are visible.
Heat the tortillas and prepare the tacos to your liking.
