Season the fish fillets with salt and pepper and brown them until cooked on both sides.
Blend the three cheeses with a little milk, in a saucepan melt the butter and add the flour, when it is golden add the fish stock or water, once it starts to boil, add the cheese and mix the two very well. Season with salt and pepper to taste and keep it warm, it should not boil, as it will form a skin.
Serve over freshly cooked fish and accompany with steamed vegetables.
