Fish with Zucchini and Sun-Dried Tomatoes

A delicious recipe for fish fillets with zucchini and sun-dried tomatoes.

  • 4 fish fillets
  • 1/2 cups sun-dried tomatoes
  • 1 cup basil, fresh
  • 4 cloves garlic, peeled and chopped
  • 1/4 cups olive oil
  • 2 cups pumpkin, cut into cubes
  • pepper

  • Season the fish fillets with salt and pepper.
  • Heat half of the olive oil in a pan and sauté the garlic for 2-3 minutes.
  • Add the fillets and cook for approximately 4 minutes on each side.
  • Remove the fillets and keep warm on a plate.
  • Add the remaining oil, sun-dried tomatoes, and zucchini to the pan and cook until well cooked and tender.
  • Serve each fillet with 1-2 tablespoons of the zucchini, tomatoes, and garnish with fresh basil.
  • Season with a little more salt and pepper.
