1/2 cups sun-dried tomatoes
1 cup basil, fresh
4 cloves garlic, peeled and chopped
1/4 cups olive oil
2 cups pumpkin, cut into cubes

Season the fish fillets with salt and pepper.
Heat half of the olive oil in a pan and sauté the garlic for 2-3 minutes.
Add the fillets and cook for approximately 4 minutes on each side.
Remove the fillets and keep warm on a plate.
Add the remaining oil, sun-dried tomatoes, and zucchini to the pan and cook until well cooked and tender.
Serve each fillet with 1-2 tablespoons of the zucchini, tomatoes, and garnish with fresh basil.
Season with a little more salt and pepper.
