Red Snapper with Pineapple

Try this delicious pineapple fish typical of Guerrero; it is a fish with a delicate flavor, ideal for a dinner in the tropics.

  • 1 1/2 kilos red snapper
  • salt , and pepper to taste
  • 100 grams unsalted butter
  • 2 tablespoons corn oil
  • 4 cups orange juice
  • 2 1/2 cups pineapple, fresh cut into pieces
  • 4 serrano chiles

  • Wash the fish very well and dry, season with salt and pepper, and sauté in butter and oil for a few minutes. Remove from heat, add the rest of the ingredients, and bake in a preheated oven at 175ºC for 20 minutes or until well cooked.
