Sardine Patties with Amaranth

This recipe is very natural and nutritious with a Mexican touch. Sardines, although many may not like them for their taste, can be eaten in different ways.   • 1 sardine
  • 2 eggs
  • 200 grams amaranth
  • 2 wheat flour
  • 3 sprigs fresh cilantro, finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • salt

  • Open the can of sardines and drain it as much as possible, leaving it almost dry.
  • Place it in a container and add the 2 tablespoons of wheat flour, then add the two egg yolks, squeeze the juice of two lemons, salt to taste, and mix everything without overbeating.
  • Take a portion of the mixed sardine dough with your hand and mold it into the shape of a football.
  • In a container, put the egg whites, take a small ball and soak it, and continue this way. Roll them on a plate spread with amaranth.
  • Heat a skillet over medium heat with olive oil and fry the patties.
  • For the finishing touch, chop cilantro as finely as possible and add lemon juice, salt to taste, and place it on top of the patties when serving.
