Swordfish Skewers

You have to try this recipe because you can't imagine how rich and easy it is to make it on the grill. These skewers are perfect for barbecue days, or field trips where there will be a barbecue. You can prepare them ahead of time and freeze.

  • In a bowl stir the first seven ingredients to make a marinade. Add the fish cubes, stir and refrigerate 2 hours. Then remove the fish and reserve the marinade.
  • Prepare the grill with charcoal. Carve a square of fish, a piece of asparagus, a small onion, a bay leaf, a pepper, another fish and so on until the skewers are ready on skewer wires.
  • Roast for about 8 minutes, turning frequently and basting with the marinade several times. Once they are ready, place them on a long plate and serve immediately.
