Mix all the sauce ingredients and set aside. Wash the fish thoroughly and dry it with a clean cloth or paper towels.
Spread the sauce on both sides of the fish, place a bed of onion on a rack, the fish, then another layer of onion on top, and cook directly on the grill. Turn the rack every 3 minutes to prevent the fish from drying out.
