Rinse the rice and in a small saucepan, heat water with brown sugar and vinegar. Once it starts to boil, add the previously washed rice and let it cook for about 20 minutes. The rice will be done when it is firm but not hard and not mushy.
Surimi, chilies, onion, mayonnaise, and cheese are mixed to make a dressing commonly called Tampico sauce.
Once the rice is cooked, let it cool for 10 minutes.
