Gourmet Rockefeller Oysters

  • 12 oyster
  • coarse salt
  • 300 grams spinach
  • 30 grams unsalted butter
  • 25 grams onion, finely chopped
  • 1 nutmeg, grated
  • 1 cayenne pepper
  • 15 milliliters pernod, or another anise-flavored appetizer
  • 60 milliliters thick cream
  • 30 grams bread crumbs, dry
  • salt , fine
  • lemons, in wedges as a garnish

  • Preheat the oven to 220°C.
  • Open the oysters and detach the meat from the inner shell. Remove the rest of the shell.
  • Place the oysters in a shallow dish on a bed of coarse salt. Refrigerate.
  • Wash and disinfect the spinach and chop it finely.
  • In a pan with butter, cook the onion until transparent.
  • Incorporate the spinach until cooked.
  • Season with nutmeg, cayenne pepper, Pernod, and cream. Cook until reduced.
  • Melt 2 teaspoons of butter in a saucepan and mix with plenty of breadcrumbs.
  • Evenly distribute the spinach mixture over the oysters.
  • Sprinkle with breadcrumbs.
  • Bake for 10 minutes.
  • Serve the oysters accompanied by lemon wedges.
