Preheat the grill to medium heat and rub the oil over the fish.
Place the ginger, chilies, garlic, salt, and pepper in a molcajete or mortar; crush until you have a smooth paste. Pour the paste into a small bowl and mix with the lemon juice and the bottle sauce.
Rub the fish all over with the mixture and let it rest for 10 minutes, then place it on a grill to cook, making sure it is well pressed. Grill for about 10 minutes on each side.
Let the fish rest for at least 5 minutes before serving.
