Grilled Red Snapper

Grilled red snapper, the secret to a good grilled fish is cooking it over charcoal.

  • 1 kilo red snapper fillet, open and clean
  • 1 tablespoon olive oil
  • 1 piece fresh ginger
  • serrano chiles, green to taste
  • 2 cloves garlic
  • salt, to taste
  • 3 pinches pepper
  • 2 lime juice
  • hot sauces, bottle

  • Preheat the grill to medium heat and rub the oil over the fish.
  • Place the ginger, chilies, garlic, salt, and pepper in a molcajete or mortar; crush until you have a smooth paste. Pour the paste into a small bowl and mix with the lemon juice and the bottle sauce.
  • Rub the fish all over with the mixture and let it rest for 10 minutes, then place it on a grill to cook, making sure it is well pressed. Grill for about 10 minutes on each side.
  • Let the fish rest for at least 5 minutes before serving.
