Lying Tilapia

Tilapia fillet wrapped with zucchinis with chorizo sauce and smoked paprika, served with criolla potato puree and chicharrón.

  • 85 grams fish, tilapia type
  • 6 chorizos
  • 4 pimentones
  • 120 milliliters broth, or chicken broth
  • 250 grams potato
  • 300 grams pork rinds
  • 2 zucchinis
  • 15 grams fresh cilantro

  • Preheat the oven to 200°C.
  • Finely chop the chorizo and paprika, deglaze with the chicken broth, and let it reduce.
  • Grill the Tilapia with the zucchinis, peel the zucchinis, removing the skin, and set aside.
  • Finish cooking in the oven for 8 to 10 minutes depending on the color of the fish.
  • Plate by laying the zucchini skins as a bed and placing the tilapia on top, then pour the chorizo sauce over it.
