4 pineapples, in slices
2 cups mandarin orange juice
1/2 cups honey
1 centimeter ginger
1 anise , star
chunks cinnamon
10 hibiscus flowers
1 tablespoon soy sauce
1 cube salt
1 pepper , to taste

Season the salmon fillets with salt and pepper and let them rest in a baking dish. Place each one on a slice of pineapple.
In a pot, boil the mandarin juice with honey, ginger, star anise, cinnamon, hibiscus, and soy sauce until the sauce reduces by half, about 20 minutes.
Strain the sauce and pour over the salmon fillets. Bake at 180 degrees for 15 to 20 minutes.
Serve hot, drizzled with the sauce.
