Mussels with Lemon

12 mussels, well washed
1 lime
1 sprig celery, finely chopped
1 Roma tomato
12 leaves basil
1 green onion, chopped
2 tablespoons olive oil

Place the washed and drained mussels in a pot with boiling salted water for 3 minutes. Remove them and take off the top shell from each one.
Detach the mussel from the shell and put it back in place. This will make it easier to eat. Set aside on a platter.
Cut 2 thin slices of lemon and chop them into triangular pieces. Squeeze the rest of the lemon.
Mix the chopped celery with the diced tomato, chopped basil, and finely chopped onion.
Add the lemon juice, oil, salt, and pepper and stir. Place about a tablespoon of this mixture on each mussel and garnish with a piece of lemon.
