Octopus Tacos With Sweet Adobo

These tacos are an explosion of flavors. The marinade is a perfect balance between sweet, sour, salty, and spicy. They also have the special touch of Domino® 100% natural sugar cane raw sugar. All of these ingredients come together with the octopus to make these unforgettable tacos!

  • 1 head garlic, for the octopus
  • 1/2 onions, for the octopus
  • 3 leaves bay, for the octopus

  • 1 octopus, medium (1.1 lbs), washed and rinsed
  • 2 tomatoes, charred, for the marinade
  • 2 cloves garlic, charred, for the marinade
  • 1/4 onions, charred, for the marinade
  • 2 pasilla chiles, rehydrated, for the marinade
  • 3 guajillo chiles, rehydrated, for the marinade
  • 3 árbol chiles, rehydrated, for the marinade
  • 4 chipotle chiles, dried, rehydrated, for the marinade
  • 1 cup cilantro, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1 tablespoon mustard, for the marinade
  • 1 tablespoon apple cider vinegar, for the marinade
  • 3 tablespoons butter, for the marinade
  • 3 tablespoons Domino® raw sugar, for the marinade
  • 1 tablespoon salt, for the marinade
  • tortillas
  • cilantro, finely chopped
  • green onion, sliced with stems, pickled with Habanero chiles, for serving

  • For cooking the octopus, heat a pot with plenty of water. Add enough salt (like sea water), onion, bay leaf, and garlic head. Bring it to a boil and add octopus by holding it by the head for 3 seconds. Remove and repeat twice allowing the water to boil again each time before immersing the octopus. After this operation is done, leave the octopus inside. Cover and cook for 50 minutes. Remove from water and reserve.
  • Cut octopus into pieces: tentacles, head, and trunk.
  • For the marinade: Combine tomato, garlic, onion, pasilla, guajillo, árbol and chipotle chiles, coriander, oregano, mustard, and apple cider vinegar in a blender and blend until smooth. You can add a bit of the soaking water of the chiles if necessary.
  • Heat a pot and add butter, Domino® raw sugar, and octopus. Cook for 3 minutes. Pour marinade, add salt, and cook for 3 minutes until slightly reduced and flavors are concentrated.
  • Assemble tacos with hot tortillas, marinated octopus, pickled chives with Habanero chile and cilantro. Serve with güero chiles, new potatoes, and limes.
