Salmon Covered with Almonds

4 tablespoons unsalted butter
2 leeks, medium, sliced thinly (only the light green and white part)
3 tablespoons lemon juice
1 cup whipping cream
1 cup almonds, peeled and chopped
1/4 cups parsley , chopped
1 tablespoon lime zest
1/2 teaspoons salt
1/8 teaspoons pepper
1/2 cups flour
6 salmon fillet
1 egg, beaten
2 tablespoons olive oil

Melt two tablespoons of butter in a large saucepan over medium-high heat.
Add the chopped leeks and cook for 2 minutes.
Reduce the heat to low, cover the saucepan, and let the leeks soften, stirring occasionally, for 20 minutes.
Increase the heat to medium, add the lemon juice, and stir until the liquid evaporates, about 1 minute.
Add the heavy cream and let it reduce for another 2 minutes.
Let it cool slightly and transfer the mixture to a blender.
Beat until a smooth-textured mixture forms.
Strain through a fine-mesh strainer and discard the leek remnants.
Season with salt and pepper.
Mix in a bowl the chopped almonds, parsley, lemon zest, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
Place the flour on another plate.
Sprinkle the salmon with salt and pepper and coat in flour.
Brush one side of the salmon with the beaten egg.
Dredge the side brushed with beaten egg in the chopped almonds.
Place the salmon on a plate with the almond side up.
Melt 1 tablespoon of butter with 1 tablespoon of oil in a skillet over medium heat.
Add the salmon with the almond side down and cook until browned, about 5 minutes.
Flip them over and cook for another 5 minutes until the center is opaque.
Repeat this with the remaining salmon, adding more butter and oil as needed.
Serve the salmon fillets with the prepared lemon sauce.
