Salmon in Granola Crust

  • 1 salmon fillet, 1 kg
  • 1 tablespoon unsalted butter , for the sauce
  • 3 tablespoons flour , for the sauce
  • 3 cups evaporated milk, for the sauce
  • 1/2 cups Parmesan cheese, for the sauce
  • 1/2 teaspoons garlic powder , for the sauce
  • lemon zest, for the sauce
  • 1/2 teaspoons thyme, powder, for the sauce
  • asparagus, to accompany
  • colored bell peppers, to accompany
  • pasta , to accompany

  • Mix the sour cream, garlic powder, and honey in a bowl, then season with salt and pepper. Set aside.
  • Chop the Granvita® Fruit, Nut, and Almond Granola on a wooden board until finely chopped. Set aside.
  • Place the salmon on a baking tray and brush with the dressing using a brush, sprinkle with Granvita® Fruit, Nut, and Almond Granola, press the crust to adhere. Bake for 15 minutes at 180 °C.
  • For the sauce: Heat the butter in a pot over medium heat, then add the flour and cook while stirring, pour in the evaporated milk, the Parmesan cheese, garlic powder, lemon zest, thyme, season with salt and pepper. Cook while stirring until it has a creamy and smooth consistency.
  • Serve the salmon with steamed vegetables and accompany with pasta.
