Salmon Papillote with Vegetables

A very tasty and healthy recipe for salmon cooked in parchment paper with vegetables. This way, you can keep the dish low in fat; as wrapping it in the paper will cook it with the steam and juices of the ingredients, making its flavor unique and keeping the fish moist and tender.

  • 4 salmon fillet, (200 grams each)
  • 1 cup fennel, in julienne
  • 1 cup carrot , in julienne
  • 1 cup chinese pea
  • 4 tablespoons coarse salt
  • 2 tablespoons black pepper
  • 3 tablespoons vermouth, dry
  • 1 orange, sliced without seeds

  • Cut 4 pieces of parchment paper measuring 30 x 60 cm.
  • In the center of each paper, place 1/4 of the fennel, carrots, and peas.
  • Sprinkle the vegetables with salt and pepper and place a salmon fillet on top of the vegetables. Season the fillet with salt and pepper.
  • Place 2-3 slices of orange on top of the fillet and a little vermouth.
  • Fold the parchment paper first inward on the two sides, then inward on the other two sides.
  • Place the salmon fillets on a plate with the folds facing down so they don't open, and cook in the microwave for 4 minutes.
  • Place the fish on a platter with or without parchment paper and serve.
