Salmon with Rainbow Vegetables

  • 1 teaspoon soy
  • 1 teaspoon ginger, chopped
  • 1/2 tablespoons salt
  • 1/2 tablespoons pepper
  • 2 zucchinis
  • 1/2 red onions
  • 1 red bell pepper
  • 2 yellow bell peppers
  • 1/2 kilos asparagus
  • 2 salmon fillet

  • Preheat the oven to 220 °C.
  • Mix the honey, ginger, and soy sauce in a bowl, then season with salt and pepper to taste. Next, add the salmon and set aside.
  • Slice the onion and bell pepper, while the zucchini is cut into rounds.
  • Place the vegetables and the fillet on a baking tray. Bake for 10 minutes, remove and serve.
