Spicy Salmon Tacos

Serve these homemade tacos with grilled avocado and vegetables topped with a cilantro dressing. If you want your dish to look like it came right from a restaurant, heat the grill well so that the grill marks are even in each food.

  • 6 árbol chiles, trimmed, seeded, and rehydrated
  • 2 pasilla chiles, trimmed, seeded, and rehydrated
  • 1 clove garlic
  • 1/4 onions
  • 1/4 cups pineapple juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cumin, grounded
  • 1 tablespoon dried oregano
  • salt and pepper
  • 500 grams salmon
  • 2 tablespoons I Can't Believe It's Not Butter®
  • 1 cup bell pepper, a mix of colors, cut into thick strips
  • 1/2 cups cherry tomato, a mix of colors, cut into halves
  • 1 lime
  • 1 avocado, cut into large wedges
  • 8 flour tortillas
  • 1/2 cups mayonnaise, for the dressing
  • 1/4 cups sour cream, for the dressing
  • 2 tablespoons lime juice, for the dressing
  • 2 tablespoons fresh cilantro, finely chopped, for the dressing
  • 1/2 tablespoons ground garlic, for the dressing
  • 1/2 tablespoons onion powder, for the dressing

  • Combine chiles, garlic, onion, pineapple juice, apple cider vinegar, cumin, oregano, salt, and pepper on a blender and blend until smooth.
  • Cut salmon into strips and marinate with the previous mixture in the refrigerator for about 20 minutes.
  • In a skillet over medium heat, melt 2 tablespoons of I Can't Believe It's Not Butter® and cook salmon until cooked though. Remove and reserve hot.
  • Add 1/2 more tablespoons of I Can't Believe It's Not Butter® and cook bell peppers and tomatoes. Add a few drops of lime and season with salt and pepper. Reserve.
  • Heat a grill over high heat. Grill avocado slices on both sides and reserve. Heat flour tortillas.
  • For the dressing: Mix mayonnaise with cream, lime juice, cilantro, garlic, and onion powder. Season to taste.
  • For assembling the tacos: Place some salmon strips on flour tortillas. Top with vegetables, avocado, and cilantro dressing.
