Season the salmon fillets with salt and pepper and let them rest in the refrigerator.
Wash the spinach very well, trim the stems, and sauté them in a little butter until they turn a vibrant green. Season with salt. Arrange them on the platter or baking dish where you will serve the dish.
Sauté the mushrooms along with the garlic in the other portion of butter, seasoning with salt and pepper. Scatter them over the spinach.
Grease the pan with a little olive oil and fry the fish pieces for about 5 minutes on each side until golden brown.
