Salmon with Almond Crust and Avocado Sauce

If you are a fan of salmon, do not hesitate to prepare this incredible recipe for breaded salmon fillet with a crunchy almond crust, accompanied by a creamy avocado sauce with basil. Incredibly delicious!

  • 3/4 cups almonds, toasted and filleted
  • 2 tablespoons breadcrumbs
  • 1 tablespoon dried oregano
  • salt and pepper, white
  • 1 teaspoon onion powder
  • 2 tablespoons Margarina Primavera® special coconut and almond oils, (tina 170 g)
  • 4 salmon fillet, 200 g each
  • 1 avocado
  • 1 clove garlic, small
  • 2 tablespoons goat cheese
  • 1 tablespoon fresh basil leaf
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh dill
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • salt and pepper
  • lime zest, for garnish

  • Preheat the oven to 180°C.
  • Process the almonds in a food processor until they reach a fine powder. In a bowl, mix the ground almonds with the breadcrumbs, oregano, salt, white pepper, onion powder, and Margarina Primavera® Special Oils Coconut and almond until you obtain a dough.
  • Season the salmon fillets and cover with the almond dough, place on a baking tray.
  • Bake for about 15 minutes or until desired doneness. Remove from the oven and set aside.
  • For the sauce, process the avocado with the garlic, goat cheese, basil, parsley, dill, lemon juice, olive oil, salt, and pepper.
  • Serve the salmon fillets with the avocado sauce and garnish with yellow lemon zest.
