If you are a fan of salmon, do not hesitate to prepare this incredible recipe for breaded salmon fillet with a crunchy almond crust, accompanied by a creamy avocado sauce with basil. Incredibly delicious!
2 tablespoons Margarina Primavera® special coconut and almond oils, (tina 170 g)
4 salmon fillet, 200 g each
1 avocado
1 clove garlic, small
2 tablespoons goat cheese
1 tablespoon fresh basil leaf
1 tablespoon fresh parsley
1 tablespoon fresh dill
2 tablespoons lime juice
1 tablespoon olive oil
salt and pepper
lime zest, for garnish

Preheat the oven to 180°C.
Process the almonds in a food processor until they reach a fine powder. In a bowl, mix the ground almonds with the breadcrumbs, oregano, salt, white pepper, onion powder, and Margarina Primavera® Special Oils Coconut and almond until you obtain a dough.
Season the salmon fillets and cover with the almond dough, place on a baking tray.
Bake for about 15 minutes or until desired doneness. Remove from the oven and set aside.
For the sauce, process the avocado with the garlic, goat cheese, basil, parsley, dill, lemon juice, olive oil, salt, and pepper.
Serve the salmon fillets with the avocado sauce and garnish with yellow lemon zest.
