Place the salmon on a baking tray and cover it with butter. Season with salt and pepper.
Around the salmon, place the previously disinfected thyme and parsley. Drizzle the salmon and herbs with white wine and cover the tray with aluminum foil.
Place the tray in the preheated oven and bake at 180ºC for 20 to 30 minutes. When ready, remove the tray from the oven and arrange only the salmon on a serving platter.
To prepare the watercress mayonnaise, blend the mayonnaise with the previously washed watercress and the lemon juice.
Finally, with the help of a spoon or a piping bag, decorate the salmon with the watercress mayonnaise.
To serve, accompany the salmon with fresh watercress and lemon slices as a garnish.
