Spring Salmon with Cilantro Pesto

This delicious recipe is ideal for salmon lovers, as it is nutritious, healthy, and contains many vitamins; it must not be missing from your repertoire!   • For the pesto: blend the pistachios with olive oil, lemon juice, cilantro, garlic, Parmesan cheese, and salt to taste in the Royal Prestige® Power Blender until all ingredients are perfectly combined and a smooth, uniform texture is achieved. Pour the pesto into a bowl and set aside.
  • Peel the carrots, slice thin strips with the Royal Prestige® Peeler, and set aside in a bowl of ice water until ready to garnish. On a Royal Prestige® Bamboo Cutting Board and with the help of the chef's knife, cut the radish into thin slices and quarters of lemon. Set aside.
  • On a Royal Prestige® Bamboo Cutting Board and with the help of a Royal Prestige® Chef’s Knife, cut the zucchini into 5 mm thick slices, the bell peppers into strips, and the broccoli into quarters.
  • In a Royal Prestige® 10” Deluxe Easy Release Pan over medium heat, wipe a paper towel with a little oil, preheat for 30 seconds, being careful not to overheat the utensils, and cook the zucchini, bell pepper, and broccoli for 4 minutes. Flip with the help of a Royal Prestige® Easy Release Silicone Spatula and cook for 4 more minutes, or until the vegetables are roasted. Season with salt and pepper.
  • Season the salmon with salt and pepper. In a Royal Prestige® 10” Deluxe Easy Release Pan over medium heat, wipe a paper towel with a little oil and preheat for 30 seconds, being careful not to overheat the utensils. Cook the salmon for 8 minutes, flip with a Royal Prestige® Easy Release Silicone Spatula, and cook for 3 more minutes or until cooked to your liking. Remove from heat.
  • Serve the salmon on a large plate, accompany with the vegetables, cilantro pesto, and garnish with the carrot, radish, lemon wedges, and cilantro leaves.
