400 grams plum, boneless and sliced

Put the rice wine, sugar, and spices to cook until it reaches the correct cooking point. Cook for 4 or 5 minutes until the mixture thickens to a syrup consistency, add the chopped plums, and remove from heat. Mix the mixture very well.
Brush the scallops with vegetable oil and season with salt and pepper, heat a skillet until it starts to smoke, sear the scallops for 30 seconds on each side or until a perfect sear is achieved.
