Shrimp Aguachile

Delicious and simple recipe for shrimp cooked in lime in a citrus and spicy sauce.

  • 1 kilo shrimp, large
  • 2 cucumbers
  • 1 red onion
  • 15 limes
  • 1 guajillo chile
  • 1 serrano chile
  • 2 tablespoons white vinegar
  • 1 pinch salt

  • Peel and clean the shrimp and place them in a deep plate.
  • Squeeze the juice of 4 limes over the shrimp and let them soak for 15 minutes.
  • Rinse the shrimp, dry them, and place them in a deep plate.
  • Peel the cucumbers. Cut one of them into small cubes and add to the plate with the shrimp.
  • Slice the onion and add to the plate with the shrimp.
  • Blend the juice of the remaining limes, white vinegar, the remaining cucumber, and the chiles. Season with salt to taste.
  • Pour the sauce over the shrimp and let them marinate for at least 15 minutes before serving.
