If you love stuffed peppers, you will adore these. They are filled with shrimp and delicious melted cheddar cheese, topped with a broth-like tomato puree sauce.
Heat a medium skillet over medium heat and add the oil, sauté the garlic and onion, add the shrimp until cooked, add cilantro, and finally add the Del Fuerte® Natural Tomato Puree, season to your taste, and set aside.
For the sauce
Add the Del Fuerte® Natural Tomato Puree to a small pot over medium heat to cook a bit, add the shrimp broth, season with a little oregano, ground cumin, salt, and pepper to taste until it reduces and becomes a thicker sauce, and set aside.
For the peppers
Place the cleaned and opened peppers on a tray, fill with shrimp and cheddar cheese. Cover with aluminum foil and bake for 5 minutes until the cheese is fully melted. Remove from the oven and set aside.
On a plate, add a bit of broth, serve a pepper, and drizzle with a little more sauce.
